Are you tired of zucchini right now? I’m not. 😉 If you’re stuck in a rut and you don’t know what to do with the last of the zucchini from your garden, maybe this will help you!
Try some Zucchini Lasagna:
Make some Zucchini Noodles. Serve them with Swedish Meatballs or beef & spaghetti sauce.
Make some Quiche with zucchini in it.
Try Zucchini Muffins instead of Carrot Muffins. Or better yet, go half & half!
Make Italian Chicken Lettuce Wraps and sub zucchini for the yellow squash.

My favorite is Zucchini Tofu. I don’t know if tofu is included in your special diet, but if not you could use some other pre-cooked protein, or use more zucchini and let the nuts and mushrooms be your protein!
